Perfect
Peach
Blueberry
Cobbler

peaches,
peeled
and
sliced
3 Tbs unsalted butter
1 Tbs lemon juice
1/3 cup sugar
1 cup fresh blueberries
Topping:
5 tablespoon unsalted butter
1 cup all purpose Flour
2/3 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1 cup heavy cream
1 egg yolk
Vanilla Ice Cream
• Cut peaches into bite size pieces.
• Heat butter in a large skillet
• Add the peaches, lemon juice and sugar.
• Cook over medium heat until softened, 2 to 3 minutes.
• Gently toss in the blueberries. For topping:
• Preheat oven to 350 degrees. Place butter in a 9 inch square pan and put in oven to melt.
• Combine the Clour, sugar, salt and baking powder in a mixing bowl.
• Add the cream and egg yolk and mix well.
• Remove the baking pan from the oven and pour all but enough butter to coat the pan into the batter.
• Spoon the peaches and blueberries into the baking pan and pour the batter on top.
• Place in oven.
• Check after 25 minutes. If the top is brown, cover loosely with foil.
• Bake until a knife or toothpick inserted near the middle comes out clean. This usually takes 30 to 35 minutes.
• Cool.
• Serve warm with vanilla ice cream.
Note: May use frozen peaches and blueberries if fresh are not in season.
